Taco Soup

When Josh's Nanny passed away, we spent almost a week with his mom's family in Lillian, Alabama.  During the day, ALL of us would hang out at Nanny's house, reminiscing about the past.  Nanny's daughters (Ruby, Ginger and Peggy) made sure we were all fed lunch and dinner each day.  Others would help as well but those three were the main ones.  I made Chicken and Cheese Pasta once.  I was CONSTANTLY making sweet tea, two pitchers at a time.  *lol* 
The boys headed down to the bay for mullet fishing.  We played horseshoes.  We played cards.  We just had genuine, non-electronic fun together!!!!
Even though we were all there for a sad occasion, I don't think I'll ever forget that week.  Simple living.  20 people.  6 days.  Memories to last a lifetime.

One meal Aunt Ginger made stuck with me and I absolutely LOVED LOVED LOVED it!  This isn't her actual recipe but its pretty close!

TACO SOUP

2 lbs ground beef
1 large onion, diced
2 cans diced tomatoes (28oz each)
1 can pinto beans (16oz)
1 can black beans (16oz)
1 envelope dry ranch dressing mix
1 can Rotel tomatoes & chilies (10oz)
1 can kidney beans (16oz)
1 can shoepeg corn (15oz)
2 envelopes taco seasoning mix
taco cheese
tortilla chips
sour cream

Dice onion, add to ground beef and cook until browned.  Drain.

As the beef is cooking, add the remaining ingredients to a large crock pot.  Add beef when done.

Cover and cook on low/medium for 2 hours or so.  Salt & Pepper to your taste.  You could easily cook this on stove top in an hour but I like for it to simmer and cook together a longer time.

Serve in a bowl with cheese and a dollop of sour cream and tortilla chips on the side.
